Lime Cake
Top this cake with lime-flavored cream cheese frosting!
Ingredients
Cake
- 1½ cups all-purpose flour
- 1½ tsp baking powder
- ½ tsp salt
- ¼ cup unsalted butter softened
- 1 cup sugar
- 1 egg room temperature
- 1 egg yolk room temperature
- 10 tbsp whole milk room temperature
- Finely grated peel of 2 limes divided
- 1 tbsp fresh lime juice
Lime Cream Cheese Frosting
- 4 oz. cream cheese softened
- 3 tbsp unsalted butter softened
- 2 cups confectioner's sugar
- ½ tsp vanilla extract
- 2 tbsp fresh lime juice
- ¼ tsp salt
Instructions
Cake
- Preheat the oven to 350°F (180°C). Grease an 8-inch square cake pan. Dust the pan with flour.
- Whisk together the flour, baking powder, and salt in a small bowl.
- Place the butter in a mixing bowl, and using an electric mixer at medium-high speed, beat until creamy. Add the sugar, and beat until fluffy, about 5 minutes. Add the egg and egg yolk one at a time, beating well after each addition. Reduce the speed to low, and add the flour mixture and the milk a little at a time, beginning and ending with the flour mixture. Add half of the lime peel and the lime juice, and beat 30 seconds. Scrape the batter into the prepared pan.
- Bake the cake 25 to 30 minutes, until a tester inserted in the center comes out clean. Place the pan on a wire rack, and let the cake cool 15 minutes. Remove the cake from the pan, and return it, top side up, to the rack to cool completely.
- Frost the top of the cake with Cream Cheese Frosting. Sprinkle the remaining lime peel on top.
Lime Cream Cheese Frosting
- Combine the cream cheese and butter in a mixing bowl, and beat with a hand mixer until blended. Add the confectioner’s sugar a little at a time, beating until blended. Add the vanilla, lime juice, and salt, and beat until blended. If the mixture is too thick, add a teaspoon or two of milk. If you want a thicker frosting, add more confectioner’s sugar.
